I'm an art student and I use gouche frequently. I have used liquid soap to make the paint easier to spread. Try that if you use gouche.
Another tip, which is kind of a no brainer- if your painting something and don't want to get any paint on the border, use tape.
If you ever use foam core, you can cut little slits (but not all the way). Doing this, you can have your foam core bend.
