Sewing a hat

Hi, I was wondering if anyone could give me any information on making a hat


Basically, I want to start off with something that looks like this

I want to be able to fold the front up & then add ears to it, & detatchable ear covers/long tassle thingies
like this


Can anyone refer me to a webpage that might offer instructions, or give me any tips? I'm going to be doing this all by hand because I don't have a sewing machine
