I wanted to post this recipe after I made a batch today and remembered exactly how gooooood it is. You may think "What's so hard about shortbread? It's just flour, butter, and sugar!" but alas, all shortbread is not created equal. This recipe, however, will make the best shortbread you've ever tasted. :D


Preheat oven to 300.

Combine two sticks of butter and 1/2 cup sugar in large mixing bowl. The butter should be SOFT. Um, trust me, I know this from experience. ;)

Sift 2 cups all-purpose flour, 1/2 cup white rice flour and a pinch of baking powder, knead into butter/sugar mixture until you have formed a dough...thing.

Form blob of dough into a....flat blob of dough on an ungreased cookie sheet. The 'flat blob of dough' should be about 3/4" thick.

Score the dough into whatever size bars you want (1 1/2"x 1/2" or so works for me) and poke little holes all over with a fork, then bake for 45-60 minutes or until the cookies are golden brown.

Take 'em out, sprinkle sugar on top, cut apart, enjoy! :)


I attempted to make these yesterday but instead made a big mess and broke my dad's coffeepot. :\ However, I made them today with no incident. If anyone else has baking horror stories that they would like to share, PLEASE do so I don't feel so dumb. ;)
