journal making question

I have only made journals a few times, using the method shown here (http://bellsouthpwp.net/d/r/drv1913/0204.html)
I was wondering, to make a larger book, do I need to put more holes in my signatures? (and by larger I mean demensions...I'm wanting to make a book with pages larger then 8 1/2 x 11)
I looked in the memories and didn't find anything, so any of you experienced ladies and lads that could help me out here...THANKS!
also- is dental floss acid free?
I'll post pictures of some stuff I've done soon! Promise! (i have no digital camera, and have to beg friends to take pictures of my craftyness!)
