sewing w/ an old sweater

i searched the memories and couldn't find an answer to this question:

i wanted to make a stuffed animal out of an old, knitted sweater. but i am afraid that if i cut the piece of knitted 'fabric', then it will just come unraveled. but maybe if i just use a small setting of stitch length on my sewing machine, then it won't unravel... has anyone ever tried this, and/or have any advice?
