Making a Cookbook...

Hello crafters!
So I've had the most brilliant idea for a gift for my mother for Christmas (yes I know it's early but I've been rather shame faced listening to Christmas music this afternoon and it's gotten me in the spirit). She's been using this old tatty binder with her recipes in it for years and years and years (hand written most of them) and I want to make her something that's a little more permanent (so that the recipe for her amazing spinach dip and butter tarts aren't lost!).
Now here comes my question. Have any of you used any of those websites that print a professional copy of a cook book for a fee? I've googled and a few choices come up but I'd rather know if any of them are better then others. Also, I'm in Canada, so they'd have to ship it here. How do you like them? Which do you suggest?
My other idea is to do it by hand, but whenever I look at her binder it's a little bit intimidating, however this also might be the better option because she does tend to add to it all the time. I don't really want to just print sheets and put them in plastic sleeves, but would rather laminate them or something. I'm not sure what my best option is.
So, suggestions?
