help: Matboard

I'm looking for art projects I can do with kids 5years old - 18 years old (three different age groups - projects don't have to be acceptable for all of the ages) that can utilize mat board scraps (all shapes, sizes, colors are available).

I work at an art center that has a frame shop and we have about 8 boxes of mat board scraps. Mat board can't be recycled, so I'm trying to find a way to use it during our summer art classes.
