PEPPERMINT BARK
very easy to do. i used 12 candy canes per every pound of white chocolate (if you can buy it from a good place, the tollhouse white morsels are not so good, i made some with choco from a local farmers market that *rocked*). put candy canes in bag, smash your candy canes till they are tiny (drywall hammer works nicely)add the dust/tiny peices to your melted white chocolate. smear in (dry!) tupperware containers about 1/4inch thick. sprinkle slightly bigger pieices on top, bang with spoon to set in. put in freezer for a few minutes, break peices and distribute.

CHOCO ESPRESSO BEANS
i failed. i failed horribly. i made little bean piles and a chocolate brick-of-death. i used don fransico's roasted vanilla coffee beans and semi sweet morsels. i recomend trying milk chocolate or adding somethign sweet.

however, peanut/semi sweet chocolate bark is excellent, as are half dipped giant pretzels.
