Herb question

Here's the deal. When we moved into the house 6 months ago, I planted lavender, oregano, basil and mint (mint and catmint).
It's starting to be fall, and knowing the nature of plants, soon they're going to keel over.
SO...
How do I go about harvesting and preserving said herbs? I really don't use them that often for cooking (the oregano and basil anyway) but I'd like to be able to give my friends fairly fresh herbs if they need them.
Can I pick the leaves and then freeze them? Or do I have to dry them?
