eco-crafts

Hello everyone! I'm teaching 5 different classes on 3 different grade levels next year and I need to start planning. One class in particular is giving me some trouble coming up with craft ideas. This class is mixed with sixth to eighth graders, but they're "troubled kids" (sexually abused or molested) and some can't read, and function on a second grade level. I'll be teaching them environmental science, and I was hoping for some eco-related crafts that could be altered for the more intellectually inclined students or simplified for the students are aren't as far along.

When I check out websites or books, the crafts are either too involved and would take hours to complete, or else they're far too simple and are intended for preschoolers. Anyone got an idea or two?
