Cutting Clay?

The picture is so perfect and crisp!
Well I've been trying to do something like that but not as elaborate and detailed and everytime I cut down the clay tube, the colors and clay smoosh together and it looks like blah.
Is there a special way to do this?
Do I chill it and than cut it?
