pumpkin soup
Nov. 24th, 2002 05:46 pmi'm not sure if you're supposed to post recipes on here but i just made this today and it's so yum for winter i thought i'd share it.
you'll need:
1 medium size pumpkin
1 large onion
approx. 1 tbsp of fresh grated ginger
salt/pepper to taste.
1 can coconut milk.
okay scoop out the inside of the pumpkin and put to one side. chop the large onion and fry gently in a large saucepan with some olive oil. add the ginger and make sure it doesn't burn(burnt ginger tastes horrible and will ruin yr soup!) add the pumpkin and leave on a gentle heat with the lid on for it to reduce a little. It will seem like a lot of pumpkin to begin with, but it goes down a lot. okay then just leave to cook and then blend :) add seasoning to yr own tastes.
this recipe might also be nice with some added corriander or potato or swede or something, so play around with it.
