Christmas Blankets

craftgrrlI'm making some really simple Christmas blankets for the families on my father's side. I have cotton Christmas print fabric, poly batting (by the yard), and red fleece for the backs.
What I'm wondering is, what's the best way to put it all together? I was thinking of just cheating the batting and fleece about 1/2 an inch and just hemming the print over the back. I also considered blanket binding, but I'm making 6 2-yard blankets, so that option is far too expensive.
Anybody have any cute and creative ideas to finish off the edges a little nicer?
