Here is a foolproof recipie that I use every year for Christmas they are fantastic and people will be raving over them if you make them. And for about 7.00 for supplies to make three dozen it makes a snazzy gift.

Simple Chocolate Truffles

1 pound bittersweet or semisweet chocolate
(Ive used Bakers brand and theyve turned out great but if you can get a hold of it I reccomend Ghirardelli.)
1 cup heavy whipping cream
unsweetened cocoa powder (for rolling finished truffles)
*note you can use crushed nuts, sprinkles, gold leaf, powdered sugar just about anything to roll these*

1. Chop chocolate finely and place in a large heat proof bowl.

2. in a small saucepan bring cream to a boil over medium-high heat. Pour directly over chocolate. Allow to sit 10 minutes undisturbed. Use a rubber spatula and gently stir chocolate and cream till combined. Allow to sit at room temperature for 15 mintues until just thickened.

3. Pour mixture into a shallow glass dish. Cover with plastic wrap and refridgerate until mixture is very cold and set but still pliable, about 30 minutes.

4. Using a spoon or a melon baller if you have one, scoop out into 1 inch nuggets (this stuff is very rich so a little will do ya), place them on a parchment or wax paper lined baking sheet and chill again for ten minutes.

5. Take the nuggets out again and roll them into your hands to make them into balls, they dont have to be uniform most good truffles arnt. Roll in cocoa powder to coat.
-Makes about 3 dozen


The best thing about this recpie is that it can be made your own, you can use anything to roll them and you can liqueurs to spice them up, Ive used Amaretto, Kaluha and theyve turned out great. You can even add lavendar or cinnamon. Id keep it natural, no artifical flavorings. :)
